Mission Guests' Place in Cook-Off
As part of their residential training program, our Mission guests attend the Cent$ible Nutrition class offered by the University of Wyoming's College of Agriculture Cooperative Extension Service. Class participants were invited to take part in the 8th annual Cent$ible Cook-off held May 31st. Some of our guests received recognition for their recipes which were judged for nutritional value, taste and appearance. We thought you might enjoy trying them out for yourselves!
Preheat Oven and Cookie Sheet to 375 degrees. Boil sweet potatoes in water until easily pierced with a fork. Cool slightly, place cooked and peeled potatoes in a large mixer bowl. Beat with electric mixer until smooth. Stir in butter until smooth. Beat in eggs, one at a time. Mix in spices, salt and milk. Pour into unbaked shells and bake on preheated cookie sheet, near center of oven for 70 minutes or until knife inserted in center comes out clean. Serves 16.
